That's because the usual sealing list in the lid is not approved for drinking water. When ordering the one approved for drinking water, only the one you get, not the other.
You do not need to specify this for food, as food will not come to the sealing list. If the food contains a lot of liquid, it may be smart to order the sealing list for drinking water to be on the safe side.
